Best Salad Ever

So this is not something I'd normally write about but I feel compelled to share the love. Because seriously, I love this salad. And if you know me well.... that is saying something. I am more a caramel candy kind of person than a kale person so take it from me... this is actually really good. As someone is who not particularly drawn to eating veggies and can struggle with getting enough green foods into my diet, having a really yummy and easy go to salad can really help in this department. Plus the lunch struggle/food boredom is real! I literally have been eating this salad every day for the last two weeks and I'm still obsessed. Like clean the bowl obsessed. Creamy, vegan, and flavorful plus super easy makes this the perfect lunch go to. So for fun, I thought I'd share my yummy recipe with you :) If you like it, let me know. I've got more!


Ingredients

Salad:

  • Kale

  • Cabbage

  • Carrot

  • Cucumber

  • Dehydrated Seaweed

  • Sesame seeds

  • Flax seeds

  • Sunflower seeds

  • Sliced Almonds

Dressing:

  • Rice Vinegar

  • Toasted Sesame Oil

  • Tahini

  • Bragg Amino Acids or Soy Sauce



Make the portions the amounts you like. If you are in Portland, New Seasons sells the bags of already chopped up kale, carrot and cabbage. And I am all about less work more ease so that is where its at for me.


Directions

  • Chop kale, cabbage, and carrot (or get yours pre-made).

  • Slice up cucumber in quarter slices (I do a whole cucumber and then put the leftovers in fridge to save for the next day lunch) and add to chopped mix.

  • Add you seeds and nuts. You can use any you like. I use sesame seeds, flax seeds, sunflower seeds, and sliced almonds.

  • In separate dish mix the dressing with a fork. Do not shake.

    • 2 parts rice vinegar

    • 2 parts toasted sesame oil

    • 1 part Braggs

    • 1-2 parts tahini depending on creamy preference

  • When you are ready to eat, add the dressing on top of the salad

  • Then tear up the dehydrated seaweed (I buy lightly salted) and add that on top of the dressed salad

  • Mixed together
